Fudgy Chickpea Protein Brownie
(sugar free, low carbohydrate, flour less, high in protein and can be made vegan)

 

 

 We all crave sweet and we all try to make it as innocent as possible, but unfortunately not always successfully… We all human after all, and we all like to enjoy life… but then, consciousness gives us the guilt trip, especially if we spend those hours in the gym on the treadmill burning naughty Toblerones we had on the weekend for tea 😀

So, this time I made these flour less fudgy chocolate brownies. And they are no ordinary brownies,they are packed with protein, contains hardly any carbs and filled with good fats from Meridian natural almond butter. I didn’t add any refined sugars either- all is natural coconut sugar which gives that delicious caramel like flavour to the bake. But.. if you don’t want those extra calories, you can replace sugar with Brown sugar replacement from Sukrin- it is calorie free and tastes awesome! Protein from chickpeas combined with quality protein from BPI Sports nutrition makes this treat not only gym goers treat, but any day to day snack snackers saver.

Conclusion- if you have that sweet tooth and want to treat your self with something absolutely delicious and not so effective on that waist line- make these brownies, you wont be disappointed!

INGREDIENTS
250g canned chickpeas (drained weight)
50g BPI Chocolate brownie flavour ISO HD )( or  any other vegan protein for Vegan option)
1/2tsp baking soda
60g Meridian crunchy almond butter
1tsp baking powder
70g Coconut merchant Coconut sugar or Sukrin calorie free brown sugar replacement
1 tsp vanilla extract
50g fat free Yogurt  like Fage or plant based yogurt for vegan option.
50g 100% natural Unsweetened cacao powder, I used Food Thoughts
4tbsp unsweetened nut milk, I used Alpro
50g dark, at least 82% cacao solids chocolate chips

40g dark chocolate chips

METHOD

To make these glorious treats couldn’t be easier. You just need few things- reliable food processor, 20×20 tin lined with non stick parchment (like Bacofoil) spatula.

Let’s start by preheating the oven to 160’C

Now, place all ingredients except chocolate chips in to the food processor and give them a good whizz. The longer the better- your brownies will be creamier and lighter texture.

Blend for a good minute, scrape the sides of the bowl and blend another minute. Now, remove the blade and pour the chocolate chips in to the prepared batter. Mix well with spatula and tranfer all in to the prepared tin.

Spread evenly scatter remaining chocolate chips on top  and bake in preheated oven for 18 minutes. Middle has to still be soft.

When done, cool completely in the pan and place in the fridge for an hour or so to firm up.

Cut in to squares and indulge according to your needs 🙂
