Raw Vegan Chocolate Bars

We all know that homemade gifts, the ones you put extra thought and effort in making leaves biggest and best impression? Gifts, that comes from our heart with love. Gifts that we know the person will love.

This Mothers Day, what can make your Mum smile more than chocolate? Who doesn’t like chocolate, especially home made one, filled with all things she loves…

So, today I am sharing the recipe for beautiful raw, vegan chocolate, which can be filled with anything your heart desires, fillings you love- orange zest, lime zest, nuts and dried fruits, nut butters or anything else.. It’s gorgeous smooth chocolate and made with organic ingredients will tick any chocolate lovers taste buds.

INGREDIENTS
For the chocolate
120g Raw cocoa butter
75g Meridian Maple syrup
75g Organic Natural cacao from Food Thoughts
Pinch of fine sea salt
For the fillings
Handful of dried white mulberry
1tbsp Food Thoughts cacao nibs

Roughly chopped pistachios
Juicy dried cranberries
~
1tbsp Meridian Natural crunchy Peanut butter
Generous pinch coarse sea salt

METHOD

In the large heat proof bowl place all chocolate ingredients, pop the bowl on to the pot with little bit slightly simmering water and melt everything whisking with a hand whisk until smooth.
I own chocolate block moulds, but if you don’t have one, can improvise by double lining square or bread loaf tin with cling film and make your chocolate block like that.


This recipe will make 3 chocolate blocks. Two of them topped- mulberry with cocoa nibs and pistachio with cranberries) and for the third one, I pour some chocolate on the bottom of the mould, spread it evenly and fill with dollops of crunchy peanut butter and some sea salt flakes following by top up of the rest of the chocolate.


Place mould in the fridge for at least an hour to set.


Can wrap these beauties in the paper and tie them with ribbon to make fabulous present for a love one
