Plum and Apple Creamy Porridge 
Makes 2 
(Vegan, sugar free and gluten free)

We all love that little bit of comfort food when wake up in the morning on a rainy and cold winters day. There fore I’m sharing very easy to make but very tasty recipe of a ‘hug in the bowl’ like porridge. With spiced roasted plums and apples drizzled with juices infused caramel. This recipe was made vegan, but you can easily substitute nut milk to cows milk and instead of coconut honey use normal honey. 

This porridge is sugar free as am using natural syrups. And can be topped with any wholesome toppings of your choice to suit anyone’s taste.

100g jumbo oats
1tbsp (15g) ground flaxseed 
Pinch of sea salt 
500ml water

Put everything in a saucepan and place on a medium heat until starts to boil. Reduce the heat, cover the lid and simmer slowly for 10 mintes stirring occasionally.

You might need to add some nut or seed milk as it thickens along the way to suit your likes.


I don’t like adding sweeteners to my oats, I rather top it up with fruit and other goodies after.

While porridge is simmering away, preheat oven to 200’c.

Cut and destone 2 plums
Core and Apple 
And cut them In to thick slices 


Spread the pieces on a lined with foil baking tray, drizzle with Meridian maple syrup and CoconuMerchant coconut honey, dust with cinnamon and nutmeg. Place in the oven for around 20min till fruit softens and syrups caramelised.

When porridge is done, just cover the lid and let it stand on the stove until fruit finishes roasting.

Divide your creamy porridge between bowls. Take roasting fruits out of the oven and share between two bowls drizzling hot juice infused caramel over the porridge. 

Now, your imagination and cravings come in to play with the rest of toppings. I did mine with crushed pecan nuts, puffed quinoa, toasted linseed, cranberries and FoodThoughts cacao nibs. Not forgetting Meridian pecan butter.

If you like more sweeter start of the the day- drizzle all with more maple syrup.
