Vegan Dark Chocolate Fudge

Absolutely delicious and just sweet enough fudge is raw and vegan dessert made using 100% cacao chocolate melts and wholesome ingredients like sticky dates which gives that richness and creamy texture to this glorious treat. It is very quick to make, you need only food processor and a freezer to create your self a treat that even children will love.

I have topped my fudge with pistachio nuts, cacao nibs and cranberries, but you can leave it as is- just with a dusting of cacao.

INGREDIENTS

120g chocolate melts 100% cacao, melted and slightly cooled, I used Food Thoughts.

105g extra virgin raw coconut oil, melted and cooled (I used CoconutMerchant coconut oil with turmeric)

400g soft pitted dates

140g coconut cream scraped from the can of coconut milk left in fridge over night

55g natural Meridian Maple syrup

45g cocoa powder, I used organic cocoa from Food Thoughts

1 heaped tbsp. cashew or almond butter, I used Meridian

METHOD

Firstly line the dish with parchment paper. You can use 20x20cm square, or like I used medium bread tin. It’s no difference really, it will be only different thickness of the fudge when it will be cut.

And now, simply place all the ingredients in to the clean food processor bowl and whizz all up till the texture is nice and smooth. You might need to scrape the sides of the bowl with spatula couple times so all ingredients blend evenly.

Transfer the fudge in to prepared tin, press firmly using another sheet of parchment paper.

Top with desired toppings, if choose not to have any- that is fine too.

Place in the freezer to set for at least an hour before cutting in to desired size chunks.

Best kept in the fridge or freezer to retain lovely chewy texture… keep it deep in the back .. where only you can find it and indulge whenever feel like something nice and chocolatey 😀 as I promise- it will go very quick otherwise.
